Here’s a simple recipe
Ingredients
For Dal:
• 1/2 cup Toor dal (pigeon pea lentils)
• 1/4 cup Moong dal (yellow lentils)
• 1/4 cup Masoor dal (red lentils)
• 1 medium Tomato, chopped
• 1/2 tsp Turmeric powder
• 1/2 tsp Red chili powder
• Salt to taste
• 3 cups Water
For Bhaji (Vegetables):
• 1 cup Mixed vegetables (carrot, peas, beans, potato, cauliflower)
• 1 Onion, finely chopped
• 1 Green chili, chopped
• 1 tsp Ginger-garlic paste
• 1/2 tsp Mustard seeds
• 1/2 tsp Cumin seeds
• 8-10 Curry leaves
• 1/2 tsp Garam masala
• 1/2 tsp Coriander powder
• 2 tbsp Oil
• Fresh coriander for garnish
Instructions
Step 1: Cook the Dal
1. Wash the lentils and soak them for 15 minutes.
2. Add the soaked lentils, water, turmeric powder, red chili powder, tomato, and salt in a pressure cooker.
3. Pressure cook for 2-3 whistles. Once done, mash the dal and keep it aside.
Step 2: Prepare the Bhaji (Vegetable Mix)
1. Heat oil in a pan. Add mustard seeds and let them splutter.
2. Add cumin seeds, curry leaves, and green chili. Sauté for a few seconds.
3. Add onion and ginger-garlic paste. Cook until the onion turns golden brown.
4. Add mixed vegetables and sauté for 5-6 minutes.
5. Add coriander powder, garam masala, and salt. Mix well.
6. Cover and cook on low heat until the vegetables are tender.
Step 3: Combine Dal and Bhaji
1. Add the cooked dal to the vegetable mixture.
2. Mix well and simmer for 5-7 minutes to combine the flavors.
3. Adjust the consistency by adding water if needed.
Serving
• Serve hot with roti, rice, or naan.
• Garnish with fresh coriander leaves and a squeeze of lemon for extra flavor.
